2 tablespoons olive oil
1 lb. Jack's Gourmet sweet Italian sausage patties, crumbled or sweet Italian sausage, sliced
1/2 teaspoon crushed dried red pepper flakes
1/2 cup sliced or diced onion
2 garlic cloves, minced
½ lb. Any combination of green, red, or yellow peppers, sliced and sauteed
1 large (29 ounce) can Italian plum tomatoes, drained, coarsely chopped
(Prefer San Marzano tomatoes when available kosher)
½ teaspoon salt
1 lb. pasta – such as penne, rigatoni, spaghetti or vermicelli
2 tablespoons parsley or fresh basil, chopped
Heat oil in a heavy skillet over medium heat.
Add sausage and crushed red pepper
Crumble sausage and sauté, stirring frequently, about 5-7 minutes.
Add onion and pepper to pan, and sauté until tender and sausage is brown, stirring occasionally, another 5- 7 minutes.
Add garlic and sauté about 1 minute more
Add tomatoes and salt
Simmer until mixture thickens slightly, about 4 minutes.
(Can be prepared a day ahead. Cover and refrigerate).
Cook pasta in large pot of boiling salted waterl drain well
Bring sauce to a simmer
Add pasta to sauce and warm until pasta is heated through and sauce thickens slightly, stirring occasionally, about 2 minutes.
